Birthday Cake Oatmeal
Every summer, I set several goals for myself, and this summer was no exception. A highly prioritized goal of mine for this summer is to become a 5-star chef. Well, somewhat. Before this summer, my cooking experience extended to scrambling eggs and microwaving popcorn. So, as I embark on my very own cooking journey in the kitchen, I’m bringing my blog along with me!
This week I tried a new breakfast recipe—birthday cake oats. The dish is on the sweeter side, but was so filling, protein-packed, and delicious! Plus, it was super simple to make.
Looks and tastes like ice cream, but it’s healthy! ;)

Recipe
Oats
50g of rolled oats
30g of vanilla collagen or protein powder
2tsp of chia seeds
1tsp of sugar-free maple syrup
A few drops of vanilla extract
180mL of boiling water
1tbsp of strawberry or raspberry jam
1tsp of sprinkles
Frosting
40g of greek yogurt
1tsp of sugar-free maple syrup
A few drops of vanilla extract
Start by mixing the oats, powder, seeds, syrup, and extract together. Then, add the mixture to boiling water and allow the ingredients to absorb in the water for 3-4 minutes. Next, transfer 2/3 of the mixture to a bowl of your choice for serving, add your tablespoon of jam to the center of the oats, and then pour the rest of the oats on top of the jam to cover the jam. Allow the oats to cool for 10 minutes. After, cover and refrigerate overnight.
The next morning, heat your oats up for about 1 minute. Mix the frosting ingredients together and spread over the oats, sprinkling some funfetti sprinkles on top for added color and sweetness!
