Cucumber Sushi Boats

YUM! Tonight’s dinner was light and filling. The cucumber in this recipe left me feeling hydrated and so refreshed!

Try this ASAP!

Ingredients

1 cucumber

8 shrimp

1/2 cup jasmine rice

1 tbsp Plant-based mayo

1 tbsp of sriracha

1/2 a lemon

Salt, pepper and paprika to taste

Recipe

This is so simple! Begin by sautéing your shrimp. I cooked mine with paprika, salt, pepper and a lemon juice squeeze.

Boil your rice as instructed.

While everything is cooking, I split my cucumber in half and scoop the seeds out. Pat the inside of each cucumber dry to allow the rice to stick.

Next, prep your yum yum sauce. Combine mayo, sriracha, pepper, salt and lemon juice and mix until smooth.

Now once you have all of your individual ingredients ready, it’s time to build your boats! Fill each cucumber with rice, top with shrimp and sauce, and add sesame seeds if you wish.
